Behind every dish and every table at Paris Crêpes Café is a team that has stayed together for over a decade. Starr (“Beebeen”) has managed the restaurant floor for 14 years, making sure every guest feels looked after from the moment they walk in. In the kitchen, Head Chef Jennifer (“JennyBear”) has spent the same 14 years perfecting the bistro’s classic French dishes, from the soupe à l’oignon to the Boeuf Bourguignon. And at the helm is Chef Thierry Clement (“TT”), owner and founder, cooking professionally since the age of 15 across France, Scotland, and now Niagara Falls. It’s this small, close-knit team not a rotating cast that keeps guests coming back year after year.



Chef Thierry Clement has spent his life in restaurant kitchens, starting at 15 years old, working his way through kitchens in France and Scotland before settling in Canada. In 2012, he opened Paris Crêpes Café: a genuine French bistro and crêperie in Niagara Falls, built around the food he grew up cooking Breton-style buckwheat crêpes (all gluten-free), French bistro classics, and a wine list to match. Thierry runs the kitchen and the floor personally, alongside a small team of 1 chef, 1 manager, a dishwasher, and 5 servers. Every dish on the menu from the soupe à l'oignon to the Boeuf Bourguignon — reflects decades of hands-on French cooking, not a franchise recipe book.
